Walk + Eat: Almond & Strawberry Oat Bars

Let’s not beat around the bush here – if you don’t like sugar, I suggest you come back another day (I’ll make something healthy-ish soon, I promise).

Traybakes. They’re the best aren’t they? This flapjack-style oat bar is sweet, sticky and perfect for an energy boost on long weather-weary walks. It’s layered with strawberry jam and almond flakes but you could mix this up with any seasonal fruit jams to match your seasonal walks.

I like my flapjack/oat bars on the soft side so I kept this in the oven on a low heat for 40 mins. Increase the heat slightly if you want more of a crunch!

If yours do fall apart when removing from the tin, take a small amount (or big, no judgement here) and serve with ice cream. Pop the rest in the fridge to firm up ready for your outdoor adventures!

Ingredients
200g butter
100g light brown sugar
150g golden syrup
75g flaked almonds
150g strawberry jam
500g rolled oats

Make
1. Preheat oven to 140ºC (fan)
2. Melt butter, sugar and syrup over a low heat in a heavy based pan
3. Stir in oats until well combined
4. Line and grease a 30 x 20cm tray and pour half ofthe mixture into the tray
5. Spoon the jam over the mixture to create anotherlayer, then top with the almonds (saving a handful for the topping)
6. Pour the rest of the oat mixture on top and pat down. Sprinkle remaining almonds on top.
7. Bake for 40 mins then leave to cool thoroughly in tin. Refridgerate for a couple of hours then turn out and cut into your bars!
