Walk + Eat: Sausage Rolls

I cheat when I make ‘homemade’ sausage rolls. I buy the pastry ready rolled, and I also buy pre-made quality sausages that include other flavourings like apple or caramelised onion, instead of just the sausage meat. Easy no-fuss bakes like this are my favourite.

Today’s recipe I added mustard and honey too, to complement the apple in the sausages I bought. Man, are they tasty!

Sausage rolls are perfect snacks on walks in autumn and winter, washed down with a flask of hot chocolate; and post-walk too of course…

1 sheet ready-made puff pastry
6 pork and apple sausages
1tbs runny honey
1tbs yellow mustard
1 egg for glazing
Sea Salt

Pre-heat the oven to 180ºC fan. Mix the honey and mustard in a bowl.

Roll out the puff pastry and cut in half lengthways. Then cut each length into 3 sections creating 6 rectangles.

Using a brush spread the mustard mixture over the pastry leaving the edges free (for the egg wash).

Remove the skin from the sausage meat and lay the meat along one side of the pastry. Repeat with the other sections.

Brush the end of each pastry section with some egg wash. Then roll the sausage until the seal is on the bottom. Continue with the rest.

Slice each sausage roll into 4 and brush with the remaining egg wash and a sprinkling of sea salt.

Bake in the oven for 25 minutes until cooked through and golden-brown. Leave to cool on a cooling rack, then devour on your winter walks!
